4½poundssweet potatoes(5 to 6large), peeled and quartered

2¼poundscarrots(4 to 6large), peeled and cut into thirds

½cuplight brown sugar

1teaspoonkosher salt

½teaspoongroundwhite pepper

¼teaspoonground ginger

¼teaspoonground nutmeg

¼teaspoonground cinnamon

Directions

Add ½ cup brown sugar, stirring to combine. Cover the pot; bring to a simmer. Remove cover and adjust heat to maintain a simmer; cook until the vegetables are starting to disintegrate, about 50 minutes.

Preheat oven to 375°F.

Add 1 teaspoon salt, ½ teaspoon pepper and ¼ teaspoon each ginger, nutmeg and cinnamon; cook, stirring and mashing occasionally with a wooden spoon, until the vegetables are chunky-smooth, about 10 minutes.
