What the Study Found

Published in the journalMolecules, the new research shows that eating foods with a higher fat or protein content could potentially decrease the odor on one’s breath after garlic consumption. And there’s a food that highlights both of these nutrients, making it the ultimate deodorizer for garlic breath.

The study found thatwhole-milk plain yogurt may help neutralize garlic breathwhen consumed soon after eating garlic, according to professor of food science and technology at The Ohio State University and senior study author Sheryl Barringer, Ph.D. This is because yogurt contains proteins and healthy fats that help mask flavors.

When placing equal amounts of raw garlic in glass bottles and confirming they could smell the strong sulfur-based odors, the researchers used yogurt as a potential deodorizer and measured the levels of volatile chemicalspyridines and pyrazines, responsible for the strong odors in garlic, before and after treatment.

“We know proteins bind flavor a lot of times,” Barringer said in apress release. “That’s considered a negative, especially if a food with high protein has less flavor. In this case, it could be a positive.”

The yogurt was 99% effective on deodorizing the pungent smells present in this study. Barringer predicts that since Greek yogurt has a higher protein content, it may be more effective to mask the garlic odor, but more research is needed to back that claim. This study was conducted in a lab, but follow-up human breath tests are expected to take place in the near future.
