Ingredients

8cupscubed crusty whole-wheat bread (1/2-inch)

2tablespoonsextra-virgin olive oil

1largeleek, white and light green parts only, sliced (1/4-inch)

1teaspoonsalt, divided

1poundfresh asparagus, trimmed and cut into 1-inch pieces

8large eggs

2cupshalf-and-half

2tablespoonschopped fresh thyme

1tablespoonDijon mustard

1teaspoonground pepper

6ouncesgoat cheese, finely crumbled

Directions

Heat oil in a large skillet over medium-high heat. Add leek and 1/2 teaspoon salt; cook, stirring occasionally, until translucent and starting to brown in some places, about 5 minutes. Add asparagus; cook, stirring occasionally, until bright green, about 3 minutes. Remove from heat.

Whisk eggs, half-and-half, thyme, mustard, pepper and the remaining 1/2 teaspoon salt in a large bowl until smooth.

Spread the vegetable mixture evenly over the bread. Sprinkle with goat cheese, pressing some of the goat cheese into the crevices. Slowly pour the egg mixture over the bread, vegetables and goat cheese. Cover and refrigerate until the liquid is absorbed, at least 1 hour or up to 24 hours.

Preheat oven to 350°F. Remove the strata from the refrigerator; let stand to warm to room temperature, about 30 minutes.

Cover the strata with foil; bake for 20 minutes. Remove the foil; bake, uncovered, until the center is set and the edges are browned and crispy, 35 to 45 minutes. Let stand at room temperature for 10 minutes before serving.

To make ahead

Refrigerate unbaked strata for up to 24 hours; proceed with Step 5.
