½cupchopped onion
¼cupchopped red bell pepper
¼cupchopped green bell pepper
4tablespoons(1/2 stick) unsalted butter, melted
2clovesgarlic, minced
¾teaspoonkosher salt
¼teaspoonground pepper
Directions
Combine squash, onion, red and green bell pepper, butter, garlic, salt and pepper in a large bowl. Transfer to the prepared pan and cover with foil.
Bake until the vegetables are very tender, 45 to 55 minutes.
