Ingredients
1 (20-ounce) package refrigeratedcheese tortellini
2tablespoonsextra-virgin olive oil
1cupchoppedyellow onion
3clovesgarlic, chopped
1/2teaspooncrushed red pepper
1 (25.5-ounce) jarlower-sodium marinara sauce
1 1/2cupsshredded low-moisture part-skim mozzarella cheese, divided
2tablespoonsgrated Parmesan cheese
2tablespoonsthinly slicedfresh basil
Directions
Bring a large pot of water to a boil over high heat. Cook tortellini according to package directions; drain and set aside.
Meanwhile, heat oil in a large nonstick skillet over medium-low heat. Add onion, garlic and crushed red pepper; cook, stirring often, until tender and aromatic, about 10 minutes. Add spinach; cook, stirring often, until wilted, about 3 minutes.
Stir in the tortellini, marinara and 1 cup mozzarella. Transfer to the prepared baking dish. Sprinkle with Parmesan and the remaining 1/2 cup mozzarella. Bake until the cheese is bubbly and lightly browned, 25 to 30 minutes. Sprinkle with basil before serving.
