1smalllemon, halved and thinly sliced

½cupraspberries

1cupcold water, plus more as needed

5cupschilled seltzer

4cups100% cranberry-raspberry juice

1(12 ounce) canfrozen lemonade concentrate, thawed

1cupvodka

Directions

Arrange lemon slices and raspberries decoratively in a 5-cup ring mold. Add 1 cup cold water; place in the freezer until frozen, about 1 1/2 hours. Add more cold water until the mold is three-quarters full. Return the mold to the freezer.

When the ice ring is completely frozen (about 1 hour), stir seltzer, juice, lemonade concentrate and vodka together in a punch bowl.

Soak a dish towel in hot water and wrap the bottom of the mold with the towel. Invert the mold onto a baking sheet, then place the ice ring, fruit-side up, in the punch bowl.(Alternatively, fill a large bowl with warm water and dip the ring mold until the edges of the ice release.)

While we can’t say this punch is exactly healthy as far as adding a ton of nutrition, the 100% cranberry-raspberry juice does provide some vitamin C to your cup while cutting down on added sugar (the added sugar comes from the lemonade). Just make sure that the label says 100% juice and not juice beverage or juice cocktail. The latter two are simply fortified sugar water with just a touch of actual juice.

Feel free to add fresh or frozen cranberries or pomegranate arils for their festive color. They’ll also add some flavor to the punch as the ice ring melts.

This punch would work well with pomegranate juice or cherry juice. Make sure to look for 100% juice on the label.

We recommend making the punch right before serving in order to keep the seltzer bubbly and effervescent. You can freeze the ice ring in Step 1 for up to two months.
