1(10 ounce) packagefrozen spinach, thawed and squeezed dry
4ouncesreduced-fat cream cheese, cut into cubes and softened
1(15 ounce) canno-salt-added white beans, rinsed
3cupschopped cooked chicken
¾cupcrumbled feta cheese
⅓cupfinely grated Parmesan cheese
1 ½tablespoonschopped fresh dill
½teaspoongrated lemon zest
½teaspoonground pepper
6frozen phyllo pastry sheets, thawed in refrigerator overnight
DirectionsPreheat oven to 400°F. Lightly coat an 8-inch-square baking dish with cooking spray.Heat 1 tablespoon oil in a large skillet over medium heat. Add onion; cook, stirring occasionally, until softened, about 4 minutes. Add garlic; cook, stirring, until fragrant, about 1 minute. Stir in spinach and cream cheese; cook, stirring constantly, until the cream cheese is melted and the vegetables are coated, about 2 minutes.
