Ingredients
1(8 ounce) packagemushrooms, thickly sliced
1cuphalved and thinly sliced onion
¼cupextra-virgin olive oil
3largecloves garlic, minced
1 ¼teaspoonsItalian seasoning
½teaspoonsalt
½teaspoonground pepper
1(8 ounce) wheelBrie, top rind removed
8ounceswhole-wheat spaghetti
4cupscoarsely chopped spinach
2tablespoonswhite balsamic vinegar
Directions
Preheat oven to 375°F.
Meanwhile, bring a large saucepan of water to a boil. Add spaghetti and cook according to package directions. Place spinach in a large colander and drain the pasta over the spinach. Return the pasta and spinach to the saucepan. When the veggies and Brie are done, add them to the saucepan. Add vinegar and stir well, making sure that everything gets coated with cheese.
