1tablespoonreduced-sodium tamari
2teaspoonstoasted sesame oil
1teaspoonchili oil
1teaspoongrated garlic
1teaspoongranulated sugar
1tablespoonchopped fresh cilantro
2teaspoonssesame seeds
DirectionsPlace cucumbers on a cutting board and cover with a paper towel or clean kitchen towel. Smash with a meat mallet or heavy pot until they start to break apart. Transfer to a colander and sprinkle with salt. Let stand for 10 minutes.Meanwhile, whisk vinegar, tamari, sesame oil, chili oil, garlic and sugar in a large bowl.Turn the cucumbers out onto a clean kitchen towel and gently pat dry.
