Add carrots and potatoes, pressing them into the mixture. Cover and cook until the chicken and vegetables are very tender, about 5 hours on High or 8 hours on Low.Transfer the chicken to a clean cutting board. Discard the bay leaf. Shred the chicken; discard the bones.
