1 ½poundsboneless, skinless chicken thighs, trimmed and cut into 2-inch pieces

1(15 ounce) canno-salt-added black beans, rinsed

1 ¾cupsfrozen roasted corn kernels

2(10-ounce) packagesfrozen cooked brown rice

1cupchopped fresh cilantro, divided

Cotija cheese and lime wedges for serving

DirectionsCombine broth, tomato paste, cumin, garlic, paprika, cayenne, pepper and salt in a 6-quart slow cooker. Add chicken, beans and corn.
