DirectionsHeat oil in a large cast-iron or nonstick skillet over medium heat. Add onion and cook, stirring, until softened and beginning to brown, about 3 minutes. Add garlic and cook, stirring, until fragrant, about 30 seconds. Add broth, thyme, salt and pepper; bring to a simmer. Add potatoes in an even layer and return to a simmer; cover and cook, stirring every 5 minutes and reducing heat to maintain a gentle simmer, until the potatoes are tender and the liquid is absorbed, 15 to 20 minutes.
