DirectionsHeat oil in a large skillet over medium-high heat. Add zucchini, onion, salt and pepper. Cook, stirring occasionally, until tender, 4 to 6 minutes.Meanwhile, mash butter with chives in a small bowl until combined.Remove pan from heat and stir in lemon juice.
