12ouncesradishes, quartered

6mediumshallots, quartered

1teaspoonchopped fresh thyme, plus more for garnish

¼teaspoonground pepper

1 ½tablespoonscider vinegar

1 ½teaspoonsunsalted butter

DirectionsPlace bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, 5 to 6 minutes. Using a slotted spoon, transfer bacon to a paper towel-lined plate, leaving the drippings in the pan. Add radishes and shallots to the pan and cook, undisturbed, until slightly charred on one side, 2 to 3 minutes. Stir and continue to cook until browned on all sides, 8 to 10 minutes. Add garlic, thyme, salt and pepper; cook, stirring constantly, until fragrant, about 1 minute. Remove from heat and stir in vinegar, butter and the reserved bacon.
