Ingredients
10ouncesthin carrots (about 6 carrots), scrubbed and halved lengthwise
2tablespoonschopped fresh sage, plus more for garnish
1 ½tablespoonsextra-virgin olive oil
2largecloves garlic, finely chopped
½teaspoonsalt
¼teaspoonground pepper
DirectionsPreheat oven to 400°F. Line a large rimmed baking sheet with parchment paper or foil. Toss potatoes, carrots, sage, oil and garlic together on the prepared baking sheet until evenly coated. Sprinkle with salt and pepper; toss again. Roast, stirring once, until the carrots and potatoes are tender and lightly caramelized, 40 to 45 minutes. Transfer to a large platter.
