Ingredients
2tablespoonsextra-virgin olive oil
1 ½cupschopped yellow onion
2tablespoonsminced garlic
2tablespoonsall-purpose flour
3cupswhole milk
2cupsunsalted vegetable broth
1largeYukon Gold potato, unpeeled and cut into 1/2-inch pieces
½teaspoonsalt
½teaspoonground pepper
2 ½cupsfrozen mixed vegetables
½cupfrozen peas
1tablespoonchopped fresh dill
1teaspoongrated lemon zest
DirectionsHeat oil in a large heavy pot over medium-high heat. Add onion; cook, stirring occasionally, until softened, about 5 minutes. Add garlic; cook, stirring constantly, until fragrant, about 1 minute. Add flour; cook, stirring constantly, until toasted, about 1 minute. Add milk, broth, potato, lima beans, salt and pepper; stir to combine. Bring to a boil over medium-high heat. Reduce heat to maintain a simmer; cook, stirring occasionally, until the potatoes are tender, about 20 minutes.
