Ingredients

2poundssweet potatoes, peeled and cut into 1-inch slices

2tablespoonsmelted butter

1tablespoonextra-virgin olive oil

¾teaspoonsalt

½teaspoonground pepper

½cuplow-sodium vegetable broth or chicken broth

¼cuppure maple syrup

1tablespoonlemon juice

Directions

Position rack in upper third of oven; preheat to 500 degrees F.

Whisk broth, maple syrup and lemon juice together in a measuring cup. Carefully add the mixture to the pan. Continue roasting until most of the liquid is absorbed and the sweet potatoes are very tender, 5 to 8 more minutes. Serve hot.
