2poundssweet potatoes, sliced 1/2 inch thick

2tablespoonsbutter, melted

2tablespoonsextra-virgin olive oil

2teaspoonschopped fresh thyme

1teaspoonchopped fresh rosemary

1teaspoonpaprika

¾teaspoonsalt

½teaspoonground pepper

1cuplow-sodium vegetable broth or chicken broth

2largecloves garlic, grated

Directions

Position rack in upper third of oven; preheat to 500 degrees F.

Whisk broth and garlic in a measuring cup. Carefully add the broth mixture to the hot pan. Continue roasting until most of the liquid has been absorbed and the potatoes are very tender, about 15 minutes more. Serve hot.
