1teaspoonground cumin
½teaspoonground cinnamon
111-ounce can condensed tomato soup
¾cuplow-sodium beef broth
1poundfrozen Italian-style meatballs
2 ½cupscooked whole-wheat couscous
¼cupchopped fresh parsley for garnish
DirectionsHeat oil in a large skillet over medium heat. Add onion and cook, stirring occasionally, until softened, about 5 minutes. Add cumin and cinnamon; cook, stirring, until fragrant, about 30 seconds. Stir in soup, broth and meatballs and bring to a simmer. Reduce heat to maintain a simmer and cook, stirring occasionally, until the meatballs are heated through, about 20 minutes.
