Ingredients
2 ½poundssweet potatoes, peeled and cubed (½-inch)
2tablespoonsneutral oil, such as canolaoravocado
¼teaspoonsalt
¼teaspoonground pepper
1 ¼cupsshredded extra-sharp Cheddar cheese, divided
4scallions, thinly sliced, divided
3slicescooked bacon, chopped
½cupsour cream
Directions
Preheat oven to 400°F.
When the sweet potatoes are tender, stir in 1 cup cheese and half the scallions. Sprinkle with the remaining 1/4 cup cheese. Bake until hot and the cheese is melted, about 5 minutes. Sprinkle with bacon. Dollop sour cream evenly over the top and sprinkle with the remaining scallions.
