1tablespoonextra-virgin olive oil

¾cupshreddedsharp Cheddar cheese

4teaspoonssour cream
Directions
Preheat oven to 425°F with rack in lower third position. Place a large rimmed baking sheet in the oven; let warm for 10 minutes.
Using a large chef’s knife, cut two (¾-inch-thick) slices from the center of each broccoli head to make 4 broccoli “steaks.” (Reserve the remaining broccoli for another use.) Place the steaks on the preheated baking sheet. Brush both sides with 1 tablespoon oil and sprinkle with ¼ teaspoon each salt and pepper.
Roast, flipping once, until the broccoli is tender-crisp and charred in spots, 25 to 30 minutes. Remove from the oven.
Mound 3 tablespoons cheese in the center of each broccoli steak. Roast until the cheese is melted, 1 to 2 minutes.
Top each steak with 1 tablespoon bacon, 1 tablespoon scallions and 1 teaspoon sour cream.
