And if you’re in the market for a new dinner recipe—especially one with a touch of fresh flavor—Lidia Bastianich’s Spaghetti with Roasted Garlic Pestomight have everything you need. The simple supper requires just seven ingredients, plus olive oil and salt, and a food processor can do a lot of the heavy lifting for you.
Lidia shared a sneak peek of her pesto tutorial onInstagram, but you can watch her break down the whole recipe onYouTube. And while this pesto recipe might not be the Genovese version you’re used to—like ourClassic Basil Pesto—it’s equally simple and packed with absurd amounts of flavor.
Lidia even says you can swap the Italian parsley in this recipe for basil or spinach, if you like. If you’re using a food processor, begin processing the ingredients together as you stream in olive oil until the texture is just how you want it. While Lidia says she prefers a chunkier pesto to add texture to the dish, a smooth and creamy one works just as well.Boil your spaghetti noodles until al dente, then add the cooked noodles to a serving bowl. Lidia recommends using tongs to pull the pasta straight out of the pot rather than using a strainer. This method means you’ll end up with a little pasta water in your bowl, which can make your pesto glossy and help it cling to your spaghetti. In the bowl, toss together the noodles with the pesto, then add the Grana Padano. While it might be tempting to drain your pasta with a strainer and heat the pasta and sauce up in your pasta pot, Bastianich recommends against it—you want to keep your pesto uncooked and tasting fresh. When the cheese is evenly incorporated, you’re ready to dish up and dig in.
