Ingredients
1 ½cupscauliflower florets
1 ½cupsbroccoli florets
2clovesgarlic, thinly sliced
1tablespoonolive oil
1teaspoondried oregano, crushed
¼teaspoonsalt
¾cupdiced red bell pepper (1-inch)
¾cupdiced zucchini (1-inch)
2teaspoonslemon zest
Directions
Preheat oven to 425 degrees F.
Add bell pepper and zucchini to the vegetables in the pan; stir to combine. Roast until the vegetables are crisp-tender and lightly browned, 10 to 15 minutes more.
Sprinkle lemon zest over the vegetables; stir and serve.
