Katie Lee Biegel knows how to get us into the fall spirit. From herbroccoli-stuffed spaghetti squashto herslow-cooker lentil stew, theKitchenco-host is fond of her comforting dinner mains. And now, she has a side dish that’s just as cozy and delicious for the season.
“I’m making melting potatoes,” Biegel said in arecent Instagram videowith Food Network. “I think they should be renamed ‘fancy potatoes that are actually so easy.'”

“It’s really important to get that great crust on your potato,” Biegel explained. “You don’t want to touch them, don’t move them around, just let them do their thing.”
She flips the potatoes to show the browned side. As the other side crisps up, Biegel pours chicken broth into the pan “in order to get them really soft and melty on the inside.” For more seasoning, she also throws in two cloves of garlic, more butter and fresh rosemary. Then, it’s time for the oven. Biegel puts the whole pan into a 400°F oven for 30 minutes.
“They’re going to come out perfectly cooked, nice and crispy brown on the outside and creamy on the inside,” Biegel raved. And once they’re out of the oven, they look exactly as described.
To finish it off, she tops the potatoes with flaky sea salt before plating. Cutting into them with her fork, the soft center of the crispy potatoes is revealed.
“I love a recipe that looks really fancy that actually took very minimal effort,” Biegel said. “If you want to impress everyone, make these potatoes.” You don’t have to tell us twice!
