Chicken cutlets are an easy, high-protein main dish that you cankeep simpleor dress up with a sauce, like in our popularChicken Cutlets with Sun-Dried Tomato Cream Saucerecipe.

We fully agree with the wise words Katie Lee Biegel wrote on her blog when describing her recentchicken cutlet recipe: “Chicken cutlets are just chicken breasts cut in half horizontally for speedy cooking, but we all know they are really the stuff dreams are made of.”

You may be used to breading your chicken breasts with breadcrumbs to give them that extra crunch, but Biegel’s trick is herbaceous while preserving the crispy exterior you love.

“Instead of the usual breadcrumbs, I coat the chicken in falafel mix, which gives a great texture and a flavorful blend of herbs and spices,” Biegel explains.

When breading her boneless, skinless chicken, Biegel covers each piece in falafel mix, which already contains an array of seasonings so you won’t have to dig through the spice cabinet yourself. If you love the taste of garlic, onion, parsley and other herbs blended together, you should definitely try out this hack. You can buy pre-made falafel mix at most standard grocery stores if you don’t already have some on hand.
