Now that spring is just around the corner, the time is right for lots of fresh, crisp salads packed with all of your favorite seasonal veggies. We’re partial to just about any recipe that highlights ingredients like spinach, fresh herbs, carrots and any other irresistible veggies that herald the warm weather ahead. But having fresh veggies isn’t the only key to a great spring salad—for something truly dreamy, you’re going to need the perfect dressing. Luckily, Joy Bauer might just have a delightful solution for spring.

Bauer, a registered dietitian and the nutrition and health expert on theTodayshow, took toInstagramthis week to share an ultra-simple salad dressing recipe that you can probably make with ingredients already in your kitchen. The bright, fresh dressing requires just three ingredients: a fresh lemon, rice vinegar and Dijon mustard (plus staples like extra-virgin olive oil, salt and pepper). Bauer uses a small jar to make the combining especially easy—you can just whisk your ingredients together (or pop the lid on and shake them up) then place your salad dressing in the fridge for whenever dinner is served. Since Bauer uses fresh lemon juice and zest in this recipe, you’ll definitely want to refrigerate it if you aren’t using it right away.The simple lemon-mustard flavor in this dressing makes it a great option for just about any salad.
