What do you get when you mix a box of vanilla cake mix with 1 cup of pumpkin puree? The beginnings of Joy Bauer’s super easy 5-ingredient pumpkin donut holes!

If you followJoy Bauer’s Instagram account, you know that she’s constantly sharing approachable, fun recipes there. She recently shared a post aboutPumpkin Donut Holesthat had us swooning. Could it really be that simple to create delicious pumpkin donut holes in our home kitchen? Joy says, “Yes!” adding, “I enjoy taking the foods we all love and crave—fudgy brownies, creamy cheesecake…and donut holes!—and recreating them in a lightened-up way using nutrient-rich ingredients.”

These donut holes are easy to make and delicious year-round, but especially in the fall, she says, “when the comforting taste of pumpkin-y goodness is in full swing.” Since these are baked, not fried, they’re lighter compared to traditional deep-fried donut holes without sparing the delicious pumpkin flavor we know and love. “They’re also infused with real pumpkin puree so they boast the natural nutrients of this seasonal veggie.”

To make Joy’s pumpkin donut holes, you’ll need a donut hole baking pan or a mini muffin pan. Spray the cavities with non-stick baking spray or coat them with a little oil (coconut, grapeseed, avocado or any other neutral-flavored oil will work).

Pour one (15.25-ounce) box of cake mix into a large bowl, then add 1 cup of pureed pumpkin (not to be confused with pumpkin pie mix, which has added sugar and spices) and 1 cup water and whisk until combined. Pour mixture into the cavities of the prepared pan and bake at 325°F for 15 minutes.

Pull the pan from the oven and carefully remove the donut holes. Brush them lightly with melted butter then dust the tops with cinnamon-sugar mixture and enjoy.
