Here is how to make the dietitian’s nutritious corn salsa that’s “so darn good,” and it’s simpler than you might think.

All you need are five ingredients to whip up this dip: 2 cups of corn kernels, 1 cup of quartered cherry tomatoes, 2 sliced jalapeños, 1 cup of diced red onion and 2 to 3 tablespoons of lime juice. Seasonings like cilantro, cumin, smoked paprika, salt and pepper are entirely optional.

Bauer grills her corn before cutting it off the cob and mixing it with her diced veggies and lime juice. Then, stir the ingredients together in a bowl and add your preferred seasonings to taste. It really is that quick, and it’s an easy way to use up any leftover cooked corn on the cob. And this recipe is completely customizable, so add in your favorite summer flavors for your ultimate bite.
