1jalapeño pepper, seeded and diced, plus sliced jalapeño for garnish

DirectionsMelt butter in a large saucepan over medium heat. Stir in flour; cook, stirring constantly, until light in color and bubbly, about 2 minutes. Reduce heat to medium-low; stir in milk, Cheddar and cream cheese; cook, stirring often, until melted and slightly thickened, about 5 minutes. Stir in corn, jalapeño and salt; cook, stirring occasionally, until the corn is fully coated and the mixture is cohesive, about 5 minutes. Garnish with jalapeño slices, if desired.
