It’s made with just five ingredients: Basil, pine nuts, olive oil, lemon juice and coarse sea salt. There’s no Parmesan (hence, why it’s vegan), but you don’t even miss it. And that’s coming from a huge cheese fan (and omnivore). The coolest part? The basil is sustainably grown inurban greenhouses.
This pesto upgrades the most basic of dishes, which I love. I’ve been mixing it with a little mayo and slathering it on slices of bread topped with chicken, mozzarella and spinach to make the world’s best panini. I’ve also whisked it into salad dressings, spooned it overroasted veggiesand used it as a meat marinade. I even love stirring a little into pasta dishes like ourPesto Ravioli with Spinach and Tomatoesfor a hit of fresh flavor. It’s safe to say I’m a BIG fan.
