Spread the carrots on the prepared pan; roast until almost tender, about 20 minutes.Meanwhile, melt honey and butter in a small saucepan over medium heat. Cook, stirring occasionally, until fragrant and combined, about 2 minutes. Remove from heat and stir in vinegar.Remove the carrots from the oven; drizzle with the honey mixture and toss to coat. Continue roasting until charred and tender, about 15 minutes more.
